100% Cabernet Pfeffer from the organic and dry farmed Enz vineyard in San Benito. Originally planted in 1923, this vineyard is rich with limestone and granite. After much theory and speculation this grape is thought to be a near extinct Bordeaux variety that now calls the central coast its sole home. Destemmed and fermented with native yeast in open top vats then aged 10 months on the lees in neutral barrels. No ameliorations, filtration or added sulfites. 70 cases made. 12.5% ABV. Keep cool.
